Almond Butter Hemp Apricot Granola


This is a combination made in heaven if you ask me. It's insanely delicious and the house smells so cozy while you make it! šŸ˜„


šŸ½ Makes approx. 8 cups of granola

šŸ•˜ 40-45 minutes


Ingredients

  • 3 cups rolled oats

  • 1 cup whole almonds

  • Ā½ cup hemp hearts @hemp.nz

  • Ā½ cup almond butter

  • Ā¼ cup maple syrup @ceresorganics

  • 2 Tbsp hot water

  • 1 tsp vanilla essence

  • 1 tsp cinnamon

  • Ā½ tsp salt

  • Ā¾ cup dried apricots (chopped) @realfooddirect


Instructions

  1. Preheat the oven to 150ā€™C. Chop the apricots.

  2. In a large bowl, place the oats, almonds and hemp hearts.

  3. In a small bowl combine almond butter, maple syrup, warm water, vanilla essence, cinnamon, and salt.

  4. Mix oats with almonds and hemp and incorporate the almond butter mixture. Mix very well. Feel free to use your hands at this point šŸ™‚

  5. Spread the oats on a baking tray and press.

  6. Bake for 30 min.

  7. Remove from the oven and let it cool down. Break the granola into smaller pieces and add chopped apricots.

  8. Store in a jar or airtight container.

  9. Enjoy with plant-based milk, coconut yogurt, fresh fruit, or anything you desire.
