From Toast to Toast-worthy: Elevate your Avocado Toast game with this Avocado Cauli Toast recipe and have this delicious breakfast classic for dinner. It takes approx. 35 minutes to make and is packed with plant-based goodness.
🍽 Serves 3-4 🕘 35-40 minutes Difficulty: Beginner
Ingredients:
3 thick slices of cauliflower
1 Tbsp olive oil
1 tsp oregano
1 tsp garlic powder
Salt to taste
Mashed avo:
3 avocadoes
1 pack of tofu
1 Tbsp mustard (optional)
Juice from ½ lemon
Salt and pepper to taste
Garnish:
Sauerkraut, I used beetroot and apple sauerkraut

Instructions:
Preheat the oven to 200’C. Prepare the ingredients. Cut the cauliflower into 1,5-2 cm thick slices. In a small bowl combine olive oil, oregano, garlic powder and a pinch of salt. Brush the oil over the cauliflower slices on both sides. Place the slices on a baking sheet.
Roast for 25 minutes, until golden brown and cooked through.
In the meantime, prepare the mashed avocado. In a bowl break the tofu crumbles using a fork, add avocado and mash the two together. Add mustard, lemon juice, salt and pepper to taste.
Once the cauliflower is ready, remove it from the oven and serve topped with mashed avocado.
Garnish with sauerkraut and sprinkle with seasoning.
