Ingredients
Chia pudding:
3 Tbsp chia seeds
1 1/2 cups plant-based milk
2 heaped Tbsp coconut yoghurt (I used Greek style @raglanfoodco )
Dash of maple syrup
Pinch of sea salt
Caramel:
1 cup dates @realfooddirect
1 cup hot water
Cherry vanilla compote @barkersofgeraldine
1/2 tsp cinnamon
1 handful of almonds
Instructions
To make the pudding: Place all the ingredients in a jar, shake very well and refrigerate for at least 1h.
To make the caramel: Place dates and hot water in food processor/blender. Soak for 10min. Blend until smooth.
Place pudding into a bowl, top with compote, caramel, almonds and cinnamon.
