Chickpea peanut stew

A Hearty and nourishing Chickpea peanut stew recipe for a cozy meal to enjoy with family on a busy day. This deliciously smoky stew is a perfect, ready in less than 40 minutes weeknight dinner.


 

🍽 Serves 4 🕘 35-40 minutes Difficulty: Beginner

 

Ingredients:

  • 3-4 medium potatoes

  • 3 garlic cloves

  • 1 tsp cumin

  • ½ tsp smoked paprika

  • 1/3 cup of peanut butter

  • 1 cup of water

  • 1 can of whole tomatoes

  • 1 can/ 1 ½ cups of cooked and drained chickpeas

  • 1 cup of frozen kale


  • Salt and pepper to taste

  • Garnish: fresh coriander/ cilantro


 

Instructions:

  1. Prepare the ingredients. Peel the potatoes and cut them into small (0.5-1 cm) cubes. Mince the garlic.

  2. Heat a little bit of oil over medium heat. Place the potatoes and a big pinch of salt. Fry for a few minutes, stirring frequently.

  3. Add minced garlic, and spices, and sauté for 2-3 more minutes, or until fragrant.

  4. Incorporate peanut butter and water. Once peanut butter has mixed in and coats the potatoes, add a can of whole tomatoes and using a spatula, break them into smaller pieces.

  5. Bring to a boil over medium-high heat. Reduce the heat to medium and add frozen kale. Add salt and pepper to taste. Place the lid on and simmer on medium-low heat for approx. 15 minutes. Until the potatoes are cooked through. Adjust salt and pepper if necessary.

  6. Serve with rice, topped with fresh coriander/cilantro.

  7. Enjoy!
