Here is a very easy and super delicious recipe for a Crunchy Cajun Tofu Bowl. The tofu is coated with panko breadcrumbs and spices which makes it crunchy and so flavorful. I paired it with corn, capsicum, rice, red onion, avocado and a thick and creamy tahini yoghurt dressing. It’s a great lunch idea, very quick to make and you can meal prep these for a few days!

Ingredients
1 pack of firm tofu
Batter:
¼ cup plant-based milk (soy, oat or almond)
¼ cup corn flour
Big pinch of salt
Coating:
½ cup panko breadcrumbs
1 Tbsp Cajun seasoning
1 tsp oregano
1 tsp garlic powder
1 tsp onion powder
½ tsp salt
Dressing:
1/3 cup of coconut yoghurt
2 Tbsp of tahini paste
2 Tbsp olive oil
Juice from 1 lemon
Salt, pepper
Paired with cooked rice, red onions, red capsicum, avocado, corn and coriander.
Instructions
Prepare all the ingredients. Cook rice, press the tofu and chop all vegetables.
In a medium bowl, combine all the ingredients for the batter.
In a separate medium bowl, mix well all coating ingredients.
Cut the tofu in half and slice.
In a large frying pan, heat the oil to medium.
Dip slices of tofu in the batter and then coating.
Fry tofu slices until crispy and golden on each side. Approx. 2-3 minutes per side.
Remove onto a paper towel to drain from excess oil.
To make the dressing: In a small bowl, combine yoghurt, tahini, lemon juice, olive oil, salt and pepper.
Assemble the bowl, place cooked rice, vegetables, and pieces of tofu. Add tahini yoghurt and garnish with fresh coriander.

Notes: If meal prepping, store the dressing separately and add it once you have reheated your meal.
