Easy Mediterranean Pasta


Packed with vegetables, full of Mediterranean flavors and very easy to make pasta.

šŸ•˜ 20-25 minutes


Ingredients

  • 1 Tbsp olive oil

  • 1 red onion (chopped)

  • 2 garlic cloves (chopped)

  • 1 celery stick (chopped)

  • 2 tbsp parsley (chopped)

  • 1 Tbsp oregano

  • 5 mushrooms (chopped into 1cm cubes)

  • 1 red capsicum (chopped into 1cm cubes)

  • 1 1/2 cups passata

  • 1 cup vegetable stock

  • 1 tsp raw sugar

  • 1 can butter beans/ cannellini beans

  • Salt, pepper to taste


Instructions

  1. Cook pasta according to the instructions from the packaging.

  2. In a saucepan heat up olive oil, fry onion, garlic and celery until golden. Add mushrooms and capsicum, parsley and oregano. Simmer for 2-3min.

  3. Add veg stock, passata and sugar. Simmer for 5min.

  4. Add beans and simmer for as long as the pasta takes.

  5. Mix in the pasta and enjoy!
