Packed with vegetables, full of Mediterranean flavors and very easy to make pasta.

Ingredients
1 Tbsp olive oil
1 red onion (chopped)
2 garlic cloves (chopped)
1 celery stick (chopped)
2 tbsp parsley (chopped)
1 Tbsp oregano
5 mushrooms (chopped into 1cm cubes)
1 red capsicum (chopped into 1cm cubes)
1 1/2 cups passata
1 cup vegetable stock
1 tsp raw sugar
1 can butter beans/ cannellini beans
Salt, pepper to taste
Instructions
Cook pasta according to the instructions from the packaging.
In a saucepan heat up olive oil, fry onion, garlic and celery until golden. Add mushrooms and capsicum, parsley and oregano. Simmer for 2-3min.
Add veg stock, passata and sugar. Simmer for 5min.
Add beans and simmer for as long as the pasta takes.
Mix in the pasta and enjoy!
