These one baking tray fajita bowls are so flavorful and packed with nutrients. Do yourself a favor and make them asap! So easy, quick to make, and so delicious!
🍽 Serves 3 🕘 25-30 minutes Difficulty: Beginner
Ingredients:
1 pack of firm tofu
1 yellow capsicum/bell pepper
1 red capsicum/bell pepper
1 brown onion
1 ½ Tbsp fajita or taco seasoning of your choice
1 can/ 1 ½ cups of cooked and drained black beans
3 taco tortillas
Dressing:
1 large or 2 medium avocados
2 cloves of garlic
Juice from 1 lime
+ 1 Tbsp water (if needed) and salt to taste
Garnish:
fresh coriander/ cilantro.
Instructions:
Preheat the oven to 200’C. Prepare the ingredients. Slice the capsicums/bell peppers and onion. Using your fingers, break the tofu into small bite-sized pieces. Place the vegetables and the tofu on a baking tray. Add seasoning and a drizzle of oil.
Roast for 12 minutes.
In the meantime, prepare the dressing in a food processor/blender place, avos, garlic, lime juice, and a little bit of water. Blend until smooth. Add salt to taste. Cut the taco tortillas in half and then slice into 1 cm think pieces.
Remove the tray from the oven, stir the vegetables and tofu, and add black beans and taco tortillas. Roast for 5 more minutes or until crispy.
Serve topped with avo dressing and some fresh coriander/cilantro.
