Summer is almost over, but not just yet, so let’s still make the most of all these beautiful seasonal vegetables like courgette/zucchini and tomatoes!
Homemade focaccia, sundried tomato pesto, grilled courgette/zucchini, and fresh vegetables, all put together into one delicious sandwich 🥪. Yum!

Ingredients:

Sundried tomato pesto:
🌿 6-7 sundried tomatoes
🌿 1 handful of basil
🌿 ¼ cup of roasted sunflower seeds
🌿 1 garlic clove
🌿 Salt, pepper (to taste)
🌿 2 Tbsp sundried tomato oil/ extra virgin olive oil
🌿 Spinach
🌿 Tomato, sliced
Grilled courgette/zucchini:
🌿 1 medium courgette/zucchini
🌿 Salt, and pepper to taste
🌿 ½ tsp Italian herbs
Instructions:
In a medium frying pan dry roast sunflower seeds. Set aside to let them cool.
Prepare vegetables, slice the courgette/zucchini and tomato.
To make the pesto, in a food processor/ mortar and pestle, place: sundried tomatoes, sunflower seeds, garlic clove, basil salt, and pepper. Blend until it reaches your desired texture, add sundried tomato oil/extra virgin olive oil, and mix only until combined.
Heat an oiled grill pan, and place slices of courgette. Sprinkle salt, pepper, and Italian herbs. Grill for 4-5 minutes. Flip, sprinkle salt, and herbs, and grill for 2-3 minutes.
Assemble the sandwich, cut the focaccia in half, spread sundried tomato pesto, and place grilled courgette, spinach leaves, and tomato slices. Add salt and pepper on top. Cover with focaccia slice on top.
