Fresh Vegan Nachos


Yay, It’s Friday and I have been dreaming of a movie night with snacks. These plant-based nachos packed with fresh vegetables are perfect for it. They are easy and quick to make (about 10 minutes), super flavorful – sweet and spicy. Great for a party to share with friends, but trust me, it’s so easy to devour them on your own as well. Enjoy! 💚

🕘 10-15 minutes


Ingredients

  • 200g of your favorite corn chips

  • 1 red onion (diced)

  • 2 cloves of garlic (minced or diced)

  • 1 tsp olive oil

  • 1/8-1/4 tsp of chilli powder (or more)

  • ½ tsp sweet paprika

  • ½ tsp salt

  • 1 can of black beans


  • 1 avocado

  • ¼ tsp nutritional yeast @realfooddirect

  • ¼ tsp salt

  • 1/8 tsp garlic powder

  • ½ lime juice


  • ½ cup of sweet corn

  • ½ cup of chopped capsicum/bell peppers (I used frozen)

  • ½ cup of chopped mango (I used frozen)

  • 1 Tbsp chopped coriander

Instructions

  1. Prepare the ingredients. Defrost in a bowl of hot water/ microwave (if using frozen veggies) and chop vegetables and coriander.

  2. Heat a small/medium frying pan. Pour olive oil and let it heat. Add red onion, garlic, chili powder, sweet paprika and salt. Stir and fry for 3-4 minutes and switch off the heat.

  3. Drain and rinse black beans and set aside 3 Tbsp (for toppings). Place fried onion garlic with spices mix in a food processor, add black beans and 2 Tbsp of water. Blend to your preference – I like to leave it a little bit chunky.

  4. In a bowl, mash the avocado, add nutritional yeast, salt, garlic powder and lime juice. Mix well.

  5. Assemble the plate: place corn chips, spread mashed avo, pour bean sauce and place all the toppings: black beans, corn, capsicum, mango, and coriander.

  6. Enjoy with your favorite people! 😊
