I grew up with this delicious salad. It was a staple summer salad at home. Here is my vegan version of it

đ 15 minutes + 30+min to marinade
Ingredients
Tofu feta:
½ block of firm tofu
1/3 cup extra virgin olive oil
1 Tbsp nutritional yeast @realfooddirect
1 Tbsp salt
1 tsp garlic powder
1 Tbsp apple cider vinegar
1 tsp dried bell peppers
1 Tbsp oregano
1 tsp basil
Cracked pepper
2 tomatoes (cut into 1/8 pieces)
½ yellow capsicum (sliced or chopped)
½ red capsicum (sliced or chopped)
½ red onion (sliced)
½ cup black olives
½ cucumber (chopped)
2 cups lettuce (sliced or teared)
½ cup pumpkin seeds
Handful of fresh oregano and basil (chopped)
Instructions
To prepare the tofu: In a medium size bowl mix olive oil and all the ingredients. Cut tofu into 1cm cubes and place them in the bowl.
Stir carefully and set aside for at least 30 min.
Prepare all the vegetables.
Assemble the salad and pour tofu together with oil and herbs.
Mix well and enjoy!
