Freshly charred corn covered with delicious guacamole and my favorite vegan bacon. Now, that's pure summer☺️
What's your favorite summer dish?

Ingredients
4 corn cobs
1 tsp olive oil
Pinch of salt
4 avocadoes
2 tomatoes
1/3 cup chopped coriander
½ diced yellow onion
Juice from 1 lemon
Salt, pepper
½ tsp olive oil
Plant-based bacon @sunfedmeats – I used ½ pack, chopped into 0.5cm pieces
Instructions
Start with preparing all the ingredients: chop the plant-based bacon, tomatoes, and coriander, dice the onion, mash the avocadoes.
Heat the grill pan to medium heat. Spread evenly olive oil. Place corn cobs and grill for 3-4 minutes on each side until soft and charred all over. Sprinkle with salt.
In the meantime, prepare the guacamole: In a bowl, place the avocadoes, tomatoes, onion coriander. Add lemon juice, salt, and pepper. Mix well until combined. Taste and add more lemon juice, salt, or pepper if needed.
Heat and oil a medium-sized frying pan, place the bacon and fry for 4-5 min, stirring frequently.
Assemble the plate: place corn cobs, place guacamole on the cobs. Sprinkle with bacon.
