Herbed Potato salad


This summer side dish steals the show. It has a great combination of sweetness and acidity that tickles your taste buds. Hope you love it.

Ingredients

  • 5 cups cooked potatoes (best if small)

  • 1 cup chopped chives

  • Ā¼ cup chopped parsley

  • 1 medium apple (diced)

  • Ā½ red onion (diced)


Sauce:

  • Ā¼ cup Dijon mustard

  • 3 Tbsp maple syrup

  • 2 Tbsp hemp oil @hemp.nz

  • 1 Tbsp apple cider vinegar

  • Salt and ground black pepper to taste

Instructions

  1. Scrub the potatoes and cut them into small (1-2 cm pieces) and cook until soft.

  2. Chop chives, parsley, apple, and red onion.

  3. Let the potatoes cool down.

  4. In a small bowl combine all the ingredients for the dressing.

  5. In a large bowl, place the potatoes, chives, parsley, and red onion. Pour the sauce and mix well until fully combined.

  6. Serve chilled.

  7. Enjoy!
