How to make a Vegan Omelette


It’s easier than you think, packed with nutrients and so delicious! When I decided to ditch the eggs, I thought I would never be able to enjoy an omelette again, and I was so wrong! These lentil omelettes are amazing, and yet, healthy!


🍽 Serves 2 (makes 4 medium omelettes)

🕘 15-20 minutes


Ingredients

  • 1 cup of red lentils

  • 2 cups of hot water

  • ½ tsp salt

  • ½ tsp onion powder

  • ¼ tsp turmeric

  • ½ tsp nutritional yeast


  • 2-3 Tbsp olive oil for frying

  • Vegetables of your choice: I used spinach, spring onion, avocado and sundried tomatoes


Instructions

  1. Rinse lentils and soak them in 2 cups of hot water for 15+ minutes.

  2. Place the lentils together with the water in the blender, and add salt, onion powder, turmeric, and nutritional yeast. Blend until smooth.

  3. Heat the oil in a medium frying pan to medium-low. Pour ¼ of the mixture and spread evenly. Fry for 3-4 minutes. Place vegetables on one side of the omelette and fold the omelette in half.

  4. Fry for 3-4 more minutes and serve.

  5. Enjoy! 💚
