Summer is around the corner (in NZ and AUS 😉) and here is how to make a delicious vegan BBQ sauce that will take your barbecue to the next level. It’s full of flavors - sweet and smoky.
And it takes about 15 minutes to make 👌

Ingredients:
1 tsp avocado oil/olive oil
1 brown onion
3 cloves of garlic
3 Tbsp of tomato paste
3 Tbsp of brown sugar
½ tsp smoked paprika
6 prunes
½ cup of passata
1 Tbsp apple cider vinegar
½ cup of water
Salt and pepper to taste
Instructions:
In a medium saucepan, heat the oil to medium. Add onion and garlic and sauté for 3 minutes.
Add tomato paste, brown sugar, prunes, and smoked paprika. Mix well and sauté for 2-3 more minutes – until fragrant.
Add apple cider vinegar, passata, and water. Bring to a boil and simmer for 10 minutes or until reduced.
Transfer the mixture onto a blender and blend until you reach your desired texture. Add more water if you want the sauce to be smoother and runnier. (I like to make it thicker and use it as a base for my marinades etc.)
Add salt and pepper to taste.
Store in a jar/airtight container in the fridge and use as a marinade or sauce for vegetables, tofu, tempeh, and vegan meat 🙂
