Ingredients:
1 block of silken tofu
1/3 cup plant milk
1 Tbsp extra virgin olive oil
1 Tbsp white wine vinegar
½ telegraph cucumber, deseeded and grated
2 Tbsp chopped dill
2 cloves of garlic, minced
½ tsp salt
Cracked pepper
Instructions:
Prepare the ingredients. Cut the cucumber in half and, using a teaspoon, remove the seeds. Grate the cucumber. Place the grated cucumber into a tea towel and grab all 4 corners to form a bag. Squeeze to drain the excess juices. Mince the garlic and chop the dill.
In a food processor, place: tofu, plant milk, white wine vinegar, and extra virgin olive oil. Blend until very smooth and creamy, and transfer it to a medium bowl.
Add grated cucumber, dill, garlic, salt, and pepper. Mix until well combined.
Serve chilled topped with more dill, kalamata olives (optional), and a drizzle of extra virgin olive oil, accompanied by pita bread and fresh vegetables.
