Here is another beautiful side dish - Maple Balsamic Glazed Carrots - that cannot be missed on the Christmas table. These maple syrup and balsamic vinegar glazed carrots are sweet and buttery and have an amazing balsamic aroma.


🕘 35-40 minutes


Ingredients:


  • 1 bunch of small carrots

  • 3 Tbsp of vegan butter (I used Nuttelex Buttery)

  • 2 Tbsp of maple syrup

  • 2 Tbsp of balsamic vinegar

  • Salt, pepper

  • Fresh thyme to serve


Instructions:


  1. Preheat the oven to 200’C. Wash and brush the carrots and cut off the carrot tops (they can be used for a delicious pesto like this one - https://www.greenkai.co.nz/post/green-goddess-pesto 👌🏻)

  2. To make the sauce: in a medium bowl, whisk melted vegan butter, balsamic vinegar, maple syrup, salt, and pepper.

  3. Place the carrots in an oven dish and pour the sauce.

  4. Place in the oven and roast for 35 minutes. Flip halfway through.

  5. Remove from the oven, arrange the carrots on a serving plate and garnish with chopped thyme.
