This is my mum’s pasta salad, it’s so easy and quick to make and so yum! Ready in 20 minutes nutritious and so delicious.

Ingredients
1 ½ cups of farfalle pasta
1 cup of sliced sundried tomatoes
1 cucumber (approx.1 ½ cups of chopped cucumber)
½ cup of black olives
½ cup of kalamata olives (or substitute for ½ cup of black olives)
A big handful of fresh basil
Easy vinaigrette dressing:
2 Tbsp of balsamic vinegar
2 Tbsp of maple syrup
1 Tbsp extra virgin olive oil
Salt, pepper
Instructions
Cook pasta according to the packaging instructions. Rinse the pasta – it stops the cooking process and pasta doesn’t stick together.
Prepare the ingredients: chop the cucumber, and slice the tomatoes.
Let the pasta cool down before mixing it with vegetables.
In the meantime, prepare the dressing: in a small jar, pour balsamic vinegar, maple syrup, olive oil, salt and pepper. Place the lid on and shake until well combined.
In a large bowl, place: cold pasta, chopped cucumbers, sundried tomatoes, olives, and basil.
Pour vinaigrette dressing over the salad and mix well.
Sprinkle some vegan parmesan on top.

Notes: Add 1 cup of chickpeas for more protein.
