This delicious chili comes together in about 30-35 minutes. It’s very aromatic, flavorful, and couldn’t be easier to make. If you are looking for an easy weeknight dinner, search no more. This is a perfect, low attention required meal that will warm your soul and body. Trust me, this mushroom chili sin carne is the best plant-based weeknight dinner.


 

🍽 Serves 3-4 🕘 30-35 minutes Difficulty: Beginner

 

Ingredients:

  • 200g of white button mushrooms

  • 1 red capsicum/bell pepper

  • 4 garlic cloves

  • ½ tsp of chili powder

  • 1 tsp of smoked paprika

  • 1 ½ tsp of cumin powder

  • 2 Tbsp tomato paste

  • 1 can/ 1 ½ cups of cooked and drained black beans

  • 1 can of whole tomatoes


Garnish:

  • Avocado and fresh coriander/cilantro

  • Serve with rice

 

Instructions:


  1. Prepare the ingredients. Slice the mushrooms, chop the capsicum/bell pepper into small pieces, mince the garlic.

  2. In a large pot, warm a little bit of oil over medium heat. Add mushrooms and saute on medium-high heat for a few minutes. Stir only occasionally. Once the mushrooms are golden brown, add capsicum/bell pepper, garlic, spices, and a few pinches of salt. Mix well and saute for 2-3 more minutes. Add tomato paste, black beans, and whole tomatoes.

  3. Bring to a boil, and simmer for 15 minutes over medium heat.

  4. Remove from the heat.

  5. Serve with rice, topped with sliced avocado and fresh coriander/cilantro.

  6. Enjoy!
