This delicious chili comes together in about 30-35 minutes. It’s very aromatic, flavorful, and couldn’t be easier to make. If you are looking for an easy weeknight dinner, search no more. Ingredients:
200g of white button mushrooms
1 red capsicum/bell pepper
4 garlic cloves
½ tsp of chili powder
1 tsp of smoked paprika
1 ½ tsp of cumin powder
2 Tbsp tomato paste
1 can/ 1 ½ cups of cooked and drained black beans
1 can of whole tomatoes
Garnish:
Avocado and fresh coriander/cilantro
Serve with rice
Instructions:
Prepare the ingredients. Slice the mushrooms, chop the capsicum/bell pepper into small pieces, mince the garlic.
In a large pot, warm a little bit of oil over medium heat. Add mushrooms and saute on medium-high heat for a few minutes. Stir only occasionally. Once the mushrooms are golden brown, add capsicum/bell pepper, garlic, spices, and a few pinches of salt. Mix well and saute for 2-3 more minutes. Add tomato paste, black beans, and whole tomatoes.
Bring to a boil, and simmer for 15 minutes over medium heat.
Remove from the heat.
Serve with rice, topped with sliced avocado and fresh coriander/cilantro.
