Simple and delicious homemade pesto served on toasted sourdough, topped with fried mushrooms and fresh cherry tomatoes.

Ingredients
2 cups of fresh parsley
1/3 cup olive oil
1/3 cup brazil nuts
2 cloves of garlic
¼ tsp salt
pepper
juice and zest from ½ lemon
Paired with:
sourdough bread
cherry tomatoes
fried mushrooms
Instructions
Chop the parsley thoroughly. Peel the garlic.
Place all the ingredients in the blender/food processor and blend to your preference.
Move it to a jar or glass container and add more oil.
In a large frying pan, sprinkle a dash of olive oil. Place sliced mushrooms and fry on both sides until golden.
Toast the bread in a toaster or on a frying pan with a little bit of oil.
Spread the pesto on the bread. Place fried mushrooms and cherry tomatoes. Sprinkle with freshly ground pepper.
