Just mix 4 beans with red onion, cucumber, capsicum, and shredded cabbage for a hearty and satisfying meal. The creamy peanut butter dressing adds a flavorful twist, with a hint of lemon and oregano for extra zing. It's a perfect combination of protein, fiber, and veggies - all in one bowl! 🍽 Serves 3 🕘 20 minutes Difficulty: Beginner

 

Ingredients:

  • 2 cans of 4 beans

  • 1 red onion, sliced

  • ½ telegraph cucumber, sliced

  • 1 red capsicum, sliced

  • 3 cups of shredded cabbage, I used purple and green


Dressing:

  • 1/3 cup of your favorite peanut butter

  • Juice from 1 lemon

  • 2 Tbsp of water

  • ½ tsp of oregano

  • Salt and black pepper to taste


 

Instructions:

  1. Prepare the ingredients. Shred the cabbage, slice the cucumber, capsicum/bell pepper, and red onion. Drain and rinse the beans.

  2. Prepare the dressing, in a medium cup/bowl combine peanut butter, lemon juice, water, oregano and salt and pepper to your preference.

  3. Assemble the salad: in a large bowl place chopped vegetables. Toss to combine and add the dressing. Incorporate the dressing and serve.

  4. Enjoy!
