Avocados are back in season in New Zealand and I'm back to obsessing over avocado toasts - daily! This pickled red onion is a game changer though. It's such a quick and simple recipe and brings so much flavor. Add it to your avocado toasts, salads and veggie bowls.

Ingredients
3 medium red onions
½ cup of apple vinegar
½ cup of water
½ tsp salt
1 tsp raw sugar
Instructions
Prepare the ingredients. Thinly slice the onions
In a saucepan, combine water, apple cider vinegar, salt and sugar. Bring to boil and switch the element off
Place sliced onion in a 200ml jar and press well
Fill up the jar with hot vinegar mixture and place the lid on
Leave to cool and then refrigerate for at least 3 hours.
Use on sandwiches, in salads and buddha bowls
