Soft, juicy, and so flavorful pulled jackfruit served on toasted sourdough with vegan mayo and lettuce. It’s nourishing, relatively easy to make and so delicious. Save this recipe for later.

Ingredients
2 Tbsp olive oil
1 medium red onion
Salt and pepper
1 can of jack fruit @naturescharm
5 cloves garlic, minced
2 Tbsp tomato paste
2 Tbsp chipotle sauce (optional)
1 tsp mustard
1 Tbsp red wine vinegar
2 Tbsp soy sauce
1 tsp Worcestershire sauce
1 cup water
Salt and pepper to taste
Instructions
Prepare the ingredients: shred jackfruit with a fork. Slice the onion and mince the garlic.
In a large saucepan, heat the oil to medium. Add onions, salt and pepper. Sauté for approx.5 min.
Add jackfruit and garlic and sauté for about 5 more minutes.
Add tomato paste, chipotle sauce and mustard. Mix well and sauté until it’s fragrant.
Pour in red wine vinegar, soy sauce and Worcestershire sauce. Mix well and add water.
Bring to boil and simmer for 25 minutes on medium-low heat.
Add salt and pepper to taste
Serve on toasted sourdough with vegan mayo and lettuce/ coleslaw.

Notes: It’s important to shred the jackfruit very well and let it simmer until it softens.
