Omg, you must try this sandwich! Sauerkraut, vegan sausage, mayo, vegan cheese, and fresh veggies… The best flavor combination you can ask for when it comes to a grilled sandwich!
I have only recently rediscovered how much I love sauerkraut and here is how to make my recent obsession. I could literally have it every day.

Ingredients
4 slices of sourdough bread
Vegan butter (I used Olivani)
1 tomato (sliced)
1 handful of spinach
2 vegan sausages (I used garlic and chili @tonzu.nz)
Vegan mayo
Vegan cheese (I used mozzarella @zenzoitsallgood)
Sauerkraut
Salt, pepper
Dried capsicum (optional)
Drizzle of olive oil
Instructions
Prepare all the ingredients. Slice the bread, tomato, cheese, and sausage.
Heat the olive oil on a large frying pan. Add sausages, sprinkle with salt, pepper, and dried capsicum. Flip and fry until golden on both sides. Set aside.
Spread the butter on both sides of 2 slices of bread. Grill the 1st slice on both sides. Set aside.
Grill the 2nd slice the same way, and spread the mayo, place spinach, sauerkraut, slices of sausage, cheese. Put the lid on to help the cheese melt to your desired consistency.
Remove the lid, place the tomatoes and cover with the other slice of bread. Flip and press to combine and it’s done!
