Rocket, Pear & Walnut Puff Pastry Squares


I love pears, especially in savoury dishes. They bring out the juiciness and make the dish light and exciting. These rocket pear walnut cream cheese squares are super easy to make, and they are a perfect plant-based appetizer or snack.

Ingredients

  • 1 sheet of vegan puff pastry

  • 2 pears (sliced)

  • Vegan cream cheese ā€“ check out my recipe for a homemade vegan cream cheese

  • A handful of fresh rocket (arugula)

  • Ā¼ cup of chopped walnuts

  • Caramelized onion relish

  • Cracked pepper



Instructions

  1. Prepare the ingredients. Thaw 1 sheet of vegan puff pastry. Slice the pears and chop the walnuts. Who needs a nutcracker if you can just smash those walnuts with a rolling pin šŸ˜‰

  2. Preheat the oven to 180ā€™C. Cut the puff pastry into 4 squares and score a 1-1.5cm border around the edge with a table knife not to cut the pastry all the way through. Poke the center using a fork.

  3. Bake for 8 minutes, remove from the oven, and press the center with a teaspoon. Generously spread the cream cheese in the center. Place pears and caramelized onion relish.

  4. Place it back in the oven for 15 minutes.

  5. Remove from the oven, place walnuts on top and bake for another 5 minutes.

  6. Remove from the oven and let it cool down.

  7. Place rocket and sprinkle with freshly cracked pepper.

  8. Enjoy with a salad or as a snack by itself šŸ‘Œ
