Aromatic and packed with flavor, ready in 20 minutes romesco sauce-inspired hummus.
Ingredients:
5 roasted bell peppers (from a jar)
1 large or 2 medium grilled tomatoes
1/3 cup blanched toasted almonds
1 cup chickpeas
1 clove of garlic (optional)
1 tsp smoked paprika
1 Tbsp red wine vinegar
¼ cup of sundried tomato oil or extra virgin olive oil
½ tsp of salt
Garnish:
1 Tbsp Chopped toasted almonds
1 Tbsp Chopped roasted bell pepper
1 tsp chopped parsley
Instructions:
Prepare the ingredients: Cut the tomatoes into thick slices and quickly grill them on both sides on high heat. Remove from the grill pan and set aside to cool.
In a food processor place: roasted bell peppers, grilled tomatoes, blanched almonds, chickpeas, garlic, smoked paprika, red wine vinegar, sundried tomato oil/extra virgin olive oil, and salt. Blend until it reaches desired texture.
Transfer the hummus to a medium bowl, and top with chopped almonds, roasted bell pepper, and chopped parsley.
Serve chilled with your favorite crackers, pita bread, and fresh vegetables.
