Summer Rolls


These summer rolls are fresh and crunchy. It's an explosion of flavors in your mouth. Save this recipe for later as these take no time to make and are mind-blowing. Oh, and you can easily make them Gluten Free.

šŸ•˜ 25-30 minutes


Ingredients

  • 2 courgettes/ zucchinis (finely sliced)

  • Vegan bacon I used @sunfedmeats

  • Ā½ block of firm tofu @tonzu.nz

  • Ā½ tsp garlic powder

  • Ā½ tsp onion powder

  • Ā½ tsp salt

  • 1 Tbsp nutritional yeast @realfooddirect

  • 3 Tbsp plant-based milk (add more if too thick) @sogoodnz

  • 7-8 sundried tomatoes (diced)

  • Ā½ bunch of chives ā€“ approx. 3 Tbsp (diced)

  • 2 Tbsp olive oil for grilling


Instructions

  1. Prepare the ingredients. Preheat the skillet grill pan with olive oil.

  2. Grill sliced zucchini for approx. 3 min on each side. Add cracked salt and pepper

  3. Grill strips of vegan bacon on both sides.

  4. To make the cream cheese: In a food processor, place: firm tofu, garlic and onion powders, nutritional yeast, salt, and plant-based milk.

  5. Add sundried tomatoes and chives to the cream cheese and mix well until combined.

  6. Assemble the rolls: place zucchini, bacon, spread cream cheese and roll from thin to thick side.

  7. Cool in the fridge for 15 minutes before serving.

  8. Enjoy!
