Sweet Potato Soup with Plant-based Chorizo


This smooth soup with a little spicy touch will warm up your soul on a chilly night.

Ingredients

  • Ā½ Tbsp olive oil

  • 4 cups chopped sweet potatoes/ kumara ( 2 large )

  • 3 cups vegetable stock

  • 1 onion (diced)

  • 3 cloves of garlic (minced)

  • Ā½ tsp sweet paprika

  • Ā¼ tsp smoked paprika

  • Ā½ tsp cumin seeds

  • 1 tsp bell pepper flakes

  • Salt and pepper to taste

  • Plant-based Spicy chorizo ā€“ gifted @plantfoodsnz

  • Olive oil to fry

  • Coriander to garnish


Instructions

  1. Prepare the ingredients: chop the potatoes, dice the onion and mince or dice the garlic.

  2. In a large pot, heat the oil to medium, add onion and sautƩ for 3 minutes. Add garlic and sautƩ for 3 more minutes. Add spices and mix well. Add sweet potatoes and fry for 5 minutes stirring occasionally.

  3. Pour vegetable stock. Simmer for 30 minutes.

  4. In the meantime, slice plant-based chorizo. In a large frying pan, heat the oil and place the chorizo, fry and stir occasionally for approx. 7 minutes.

  5. Remove the soup from the heat. Blend until smooth and add salt and pepper to taste.

  6. Serve topped with fried chorizo. Garnish with fresh coriander.
