The Best Tofu Scramble


This is the best tofu scramble I have ever had. It’s not too dry, and not too runny, has a perfect egg-like texture and a beautiful flavor. Yum! I absolutely love it! I'm sure you will too!

Ingredients

  • 1 tsp vegan butter

  • ½ onion (diced)

  • 2 mushrooms (sliced)

  • 1 block of firm tofu

  • 1 tomato (sliced)

  • 1 Tbsp nutritional yeast

  • ½ tsp garlic powder

  • ½ tsp turmeric

  • 1 tsp mustard

  • 1 Tbsp vegan mayo

  • 1 block of silken tofu

  • 2 Tbsp diced chives

  • Salt, pepper to taste

  • Sourdough bread, lettuce/spinach and fresh chives to serve.

Instructions

  1. Prepare all the ingredients: Slice and dice vegetables.

  2. Heat the butter on medium heat. Add onion and fry until golden. Add tomato and mushrooms. Fry for 3 min.

  3. Crumble firm tofu with your hand and add it to the vegetables. Add nutritional yeast, turmeric, garlic powder, vegan mayo, and mustard. Cook for 4-5 min.

  4. Crumble silk tofu and add it to the rest. Mix in until well combined. Add diced chives. Sprinkle with salt and pepper to taste.

  5. Serve on freshly toasted sourdough, lettuce or spinach leaves, with some extra chives and pepper if desired.

  6. Enjoy!
