The best tacos ever! There was a beautiful authentic Mexican Taco place in the building where I was living in Barcelona. Omg, those tacos! Here is how I remember them:

Ingredients
Shredded Chicken:
Ā½ pack plant-based chicken strips @birdseye_au
Ā½ sachet Taco seasoning @farrahsnz
1 tsp coconut oil
3 Tbsp water
Salsa:
1 tomato (diced)
Ā½ red onion (diced
4 slices of jalapeƱo (diced)
Coriander (diced)
Ā¼ red capsicum (diced)
1 Tbsp lime juice
Grilled pineapple
Ā¼ fresh pineapple
1 tsp coconut oil
Quick guac:
2 avocadoes
Salt, pepper
1 Tbsp lime juice
Chipotle sauce (La Morena)
Fresh coriander to serve
Instructions
Prepare the salsa: dice tomato, capsicum, red onion and coriander. Add lime juice and mix well.
Oil your skillet grill pan with 1 tsp of coconut oil. Spread quarters of pineapple (see video). Grill for 2-3 min on each side. Set aside.
Shred plant-based chicken strips into smaller pieces. In a bowl combine shredded chicken with taco seasoning.
In a frying pan heat up 1 tsp coconut oil. Add chicken and fry for 5 min. Stir in water and fry for another 2-3 min. Set aside.
Mash 2 avocadoes until smooth. Add lime juice, salt and pepper.
