The Best Vegan Tacos


The best tacos ever! There was a beautiful authentic Mexican Taco place in the building where I was living in Barcelona. Omg, those tacos! Here is how I remember them:

šŸ•˜ 15-20 minutes


Ingredients


Shredded Chicken:

  • Ā½ pack plant-based chicken strips @birdseye_au

  • Ā½ sachet Taco seasoning @farrahsnz

  • 1 tsp coconut oil

  • 3 Tbsp water


Salsa:

  • 1 tomato (diced)

  • Ā½ red onion (diced

  • 4 slices of jalapeƱo (diced)

  • Coriander (diced)

  • Ā¼ red capsicum (diced)

  • 1 Tbsp lime juice


  • Grilled pineapple

  • Ā¼ fresh pineapple

  • 1 tsp coconut oil


Quick guac:

  • 2 avocadoes

  • Salt, pepper

  • 1 Tbsp lime juice


  • Chipotle sauce (La Morena)

  • Fresh coriander to serve


Instructions

  1. Prepare the salsa: dice tomato, capsicum, red onion and coriander. Add lime juice and mix well.

  2. Oil your skillet grill pan with 1 tsp of coconut oil. Spread quarters of pineapple (see video). Grill for 2-3 min on each side. Set aside.

  3. Shred plant-based chicken strips into smaller pieces. In a bowl combine shredded chicken with taco seasoning.

  4. In a frying pan heat up 1 tsp coconut oil. Add chicken and fry for 5 min. Stir in water and fry for another 2-3 min. Set aside.

  5. Mash 2 avocadoes until smooth. Add lime juice, salt and pepper.

  6. Enjoy!!!
