I swear every single time I make fajitas I hear Ross saying, “The only thing weird would be if someone didn’t like the Mexican food, because I’m making FAJITAS!”

It’s been my favorite TV show for years now, and I have re-watched it too many times. Here is how to make my beautiful Fajitas
🍽 Serves 2-3
🕘 40-45 minutes
Ingredients
Marinade:
1 tsp plant-based chicken stock powder
1 tsp garlic powder
1 tsp cumin powder
½ tsp dried coriander
1 tsp ground paprika
½ tsp chili powder
2 Tbsp olive oil
Pinch of salt
1 red capsicum
1 yellow capsicum
1 green capsicum
1 yellow onion
1 firm tofu block @beansupremefood
Avocado sauce:
1 avocado
1 Tbsp olive oil
½ tsp garlic powder
½ tsp salt
½ tsp oregano
Lemon juice from ½ lemon
¼ cup cold water
½ tsp pepper
Instructions
To make the marinade: In a large bowl combine all the spices and olive oil. Mix well until combined. Crumble the tofu into small, 1cm max pieces. Mix in the tofu. Set aside.
Preheat the oven to 200’C. Slice all the vegetables.
Place all vegetables on a baking tray. Add marinated tofu.
Bake for 25-30min
Wrap tortillas tightly in foil and warm in the oven for the last 5 minutes of the baking time.
To make the sauce: Place all the sauce ingredients in a blender or food processor and blend until smooth. Add more water if necessary.
Assemble the fajitas: Place the filling in a tortilla wrap, sprinkle with fresh coriander and pour the sauce.
