Vegan Baked French Toast

This Vegan Baked French Toast is a very easy to make recipe and it brings so much joy to the table. The toasts are crispy on the top and around the edges, yet very soft and flavourful inside.


šŸ½ Serves 4-5

šŸ•˜ 40 minutes



Ingredients

  • 3 very ripe bananas

  • Ā¾ cup of plant-based milk (I used oat milk)

  • 2 Tbsp vegan butter (melted) + more to butter the oven dish

  • 2 Tbsp of brown sugar

  • 3 Tbsp cornstarch

  • 1 Tbsp vanilla extract

  • Ā½ Tbsp cinnamon

  • Ā½ tsp salt


  • 10-12 thick slices of bread

Toppings:

  • 1 Ā½ sliced bananas

  • 1/3 cup of pecans


  • 1 Tbsp of raw sugar

  • 1 tsp of cinnamon

  • Ā½ tsp ginger powder (optional)


To serve:

  • Strawberries (cut into quarters)

  • Maple syrup


Instructions

  1. Prepare the ingredients and preheat oven to 180ā€™C.

  2. Mash the bananas and place them in a bowl/blender. Add plant-based milk, melted butter, brown sugar, cornstarch, cinnamon, vanilla extract, and salt. Blend until smooth.

  3. Pour the mixture into a large shallow bowl. Butter the bottom and sides of an oven dish.

  4. Dip the bread slices in the mixture and place them in the oven dish, stacking one against another.

  5. Place sliced banana and pecans on top. In a small bowl, combine sugar, cinnamon and ginger and sprinkle the mix over the bread.

  6. Bake for 30 minutes.

  7. Remove from the oven and let cool for a few minutes.

  8. Top with strawberries and maple syrup.
