Vegan Bean Stew

Ingredients

  • 1 can butter beans

  • 1 can cannellini beans

  • 1 can whole tomatoes

  • Ā½ - 1 cup water (depending on how thick you like it)

  • 1 tsp olive oil

  • 5 bay leaves

  • Ā¼ tsp allspice

  • 1/8 tsp smoked paprika

  • Ā½ Tbsp raw sugar

  • 1 tsp dried parsley

  • 1 tsp marjoram

  • 1 medium onion

  • 3 cloves of garlic

  • 1 Tbsp tomato paste

  • Salt and pepper to taste


Instructions

  1. Prepare all the ingredients. Dice the onion, and mince the garlic.

  2. In a large pot, heat the olive oil to medium. Add onion, garlic, bay leaves, allspice, marjoram, parsley, tomato paste, smoked paprika, and raw sugar. Mix and sautƩ for 4 minutes.

  3. Add tomatoes and break them down with a spatula. Add beans, water, salt, and pepper. Place the lid on and simmer for 20 minutes on medium-low heat.

  4. Serve with toasted bread.

  5. Enjoy!
