Is there anything dreamier than a cake for breakfast? 🥰 Well, this Vegan Carrot Cake Oatmeal tastes just like a delicious carrot cake and takes no time to make.

Ingredients


  • 1 cup rolled oats

  • 1 carrot (grated)

  • 1 cup coconut milk

  • 1 cup soy milk

  • 1 Tbsp raw sugar

  • 1 tsp cinnamon

  • 1/4 tsp ginger powder

  • 1/4 tsp nutmeg

  • ¼ tsp vanilla essence (optional)

  • 1 pinch of salt

  • 1 orange (sliced)

  • 1/3 cup walnuts (chopped)

  • 2 heaped Tbsp Greek style coconut yoghurt

  • Cinnamon to serve

  • 1-2 Tbsp maple syrup to serve


Instructions


  1. In a small pot, heat up plant-based milk.

  2. Add oats, sugar and spices and cook for 5 min frequently stirring.

  3. Add carrot and cook for another 5min.

  4. Assemble in a bowl: place oatmeal, sliced oranges, coconut yoghurt, walnuts. Top with cinnamon and maple syrup.

  5. Enjoy!
