If you are looking for a real explosion of flavors, you will love these loaded fries. They are everything you can imagine when it comes to delicious comfort food.

Ingredients
3-4 potatoes
1 sweet potato
1 Tbsp olive oil
½ tsp salt
½ tsp pepper
1 pack vegan mince @beansupremefood
1 Tbsp olive oil
4 garlic cloves (diced)
1 onion (diced)
1 carrot (diced)
1 tsp chili flakes (add more if you like spicy)
1 Tbsp cumin
1 tsp raw sugar
1 tsp sweet paprika
Âź tsp smoked paprika
1 can of black beans
200g portobello mushrooms
1 red capsicum
2 tomatoes (diced)
1 cup passata
½ cup vegetable stock
2 Tbsp tomato paste
1 tsp salt
½ tsp pepper
Cheese sauce
4 Tbsp vegan butter ( I used Olivani)
4 Tbsp flour
2 cups plant-based milk
1 Tbsp mustard
½ cup nutritional yeast @realfooddirect
½ tsp salt

½ tsp garlic powder
Âź tsp onion powder
Instructions
Prepare all the ingredients, chop and dice all vegetables.
In a large skillet pot, heat the oil. Add onion and garlic and fry until golden. Add diced carrots, spices, and sugar. Fry for 2-3 min. Add vegan mince and mushrooms and fry for another 5 minutes.
Preheat the oven to 220âC.
Add tomato paste, passata, stock, beans, tomatoes, and capsicum. Simmer on low-medium heat for the time being.
Place the potatoes in a large bowl. Add oil, salt and pepper, and mix well.
Move the potatoes onto a baking tray and bake for 25-30 min (until golden and crispy).
In a medium-size saucepan, melt vegan butter. On medium-low heat, add flour while stirring. Slowly incorporate milk while constantly stirring. Simmer until smooth and creamy. Add nutritional yeast, mustard, and spices.
Remove the potatoes from the oven. Place the chili mixture and pour the cheese sauce on top.
Garnish with fresh coriander.
