Vegan Crepes with Chia Pudding and all the good stuff


Are you team crepes or pancakes?

I'm definitely team crepes as I grew up with them šŸ˜

I love how thin and light they are and that crispiness on the edges is pure magic.


Here is a recipe for this mind-blowing dessert


šŸ½ Serves 4-5

šŸ•˜ 25-30 minutes


Ingredients


Crepes:

  • 2 cups plain or oat flour

  • 2 cups plant-based milk (creamy)

  • 3 Tbsp extra virgin olive oil or melted butter

  • 1/2 tsp of salt

  • 1/2 tsp of raw sugar


Chia pudding:

  • 3 Tbsp chia seeds

  • 1 1/2 cups of coconut milk

  • Pinch of salt


Toppings:

  • Cacao powder

  • Hemp hearts @hemp.nz

  • Chopped Brazil nut


Instructions

  1. In a jar, place chia seeds, coconut milk and salt. Shake until well combined and set aside for at least 30min.

  2. In a large bowl, place flour, milk, olive oil/melted butter, salt, and sugar. Whisk until well combined and smooth. Set aside for 5 minutes.

  3. Heat a frying pan to medium, add a small dash of oil and spread it evenly with a paper towel. Pour a scoop of the batter. Tilt the pan, so that the batter coats the surface evenly. Fry for 3 min, flip, and fry for another 2min.

  4. Assemble the plate: spread your favorite jam on the crepe, and fold into a quarter. Pour chia pudding and place the toppings.

  5. Enjoy! šŸ’š
