Are you team crepes or pancakes?
I'm definitely team crepes as I grew up with them š
I love how thin and light they are and that crispiness on the edges is pure magic.
Here is a recipe for this mind-blowing dessert
š½ Serves 4-5
š 25-30 minutes
Ingredients
Crepes:
2 cups plain or oat flour
2 cups plant-based milk (creamy)
3 Tbsp extra virgin olive oil or melted butter
1/2 tsp of salt
1/2 tsp of raw sugar
Chia pudding:
3 Tbsp chia seeds
1 1/2 cups of coconut milk
Pinch of salt
Toppings:
Cacao powder
Hemp hearts @hemp.nz
Chopped Brazil nut
Instructions
In a jar, place chia seeds, coconut milk and salt. Shake until well combined and set aside for at least 30min.
In a large bowl, place flour, milk, olive oil/melted butter, salt, and sugar. Whisk until well combined and smooth. Set aside for 5 minutes.
Heat a frying pan to medium, add a small dash of oil and spread it evenly with a paper towel. Pour a scoop of the batter. Tilt the pan, so that the batter coats the surface evenly. Fry for 3 min, flip, and fry for another 2min.
Assemble the plate: spread your favorite jam on the crepe, and fold into a quarter. Pour chia pudding and place the toppings.
