Sandwich lovers, here is a delicious vegan veggie-packed sammie for you.
I love it more than I did the real egg version of it. š
š½ Serves 4-5
š 10-15 minutes
Ingredients
1 can chickpeas/ 1 Ā½ cups cooked chickpeas
2 Tbsp olive oil
Ā½ tsp mustard
1 tsp curry powder
Ā¼ tsp turmeric
Ā¼ tsp salt
Cracked pepper to taste
4-5 ice cubes (optional)
Spinach, tomato, avocado
Instructions
Prepare all the ingredients.
In a food processor, place all the ingredients and blend until your desired texture. If you want it chunky, skip the ice cubes and only pulse a few times.
Assemble the sandwich: Spread evenly the curried "eggā on one side of the bread slice, add spinach, tomato, and avocado. Top with a slice of bread. Cut in half and enjoy!
Store in an airtight container in the fridge for up to 5 days.
