Vegan Date Scones


These scones are so quick to make, yet so delicious. They are incredibly buttery, flavorful, light, and vegan. Dreams do come true!

Ingredients

  • ½ cup of room temperature soy milk

  • 1 Tbsp apple cider vinegar


  • 2 ¼ cups plain flour

  • 1 tsp baking powder

  • 2 Tbsp raw sugar

  • 1 tsp salt

  • ½ tsp cinnamon

  • ½ tsp nutritional yeast @realfooddirect

  • ½ cup cold vegan butter (I used @nuttellexspread Buttery)

  • 1 1/2 cup of chopped dates @cinderellanz_


  • 1 Tbsp soy milk – brush before baking

  • 1 tsp raw sugar mixed with ½ tsp cinnamon powder


Instructions

  1. In a bowl/measuring cup combine plant-based milk and apple cider vinegar.

  2. Prepare all the ingredients. Chop dates. Preheat the oven to 200’C.

  3. In a large bowl, sift the flour and add baking powder, salt, sugar, cinnamon, and nutritional yeast. Mix well.

  4. Add small pieces of cold butter and combine the two with your fingers (see the video).

  5. Pour the milk into the large bowl and mix. Add dates and combine.

  6. Spread some flour on the surface. Place the dough and shape it into a circle. Cut into 8 pieces.

  7. Place the scones on a baking tray. Brush with soy sauce and sprinkle cinnamon sugar on top.

  8. Bake for 14 min.

  9. Remove from the oven and let them cool down.

  10. Serve with some plant-based butter.

  11. Enjoy!
