Vegan Double Choc Fudgy Brownie Pots


This is my go-to when I get those intense chocolate cravings.

Insanely delicious, rich in chocolate flavour and so fudgy individual brownies ready in 30 minutes. They are crispy on the top and beautifully fudgy on the inside.

Served with Greek-style coconut yoghurt to counterbalance the sweetness, berries for juiciness and mint for freshness. Trust me, it’s a match made in heaven 👌

Ingredients

  • 1 cup plain flour

  • ½ cup organic cacao powder

  • 1 tsp baking powder

  • ½ tsp salt


  • ½ cup melted vegan butter (hot)

  • 1 cup raw sugar

  • ½ cup brown sugar

  • ½ cup plant-based milk (hot)

  • 1 Tbsp vanilla extract


  • 100g chopped plant-based milk chocolate (I used @whittakersnz Oat chocolate)

  • 50g chopped dark chocolate (I used @whittakersnz 50% dark chocolate)


To serve:

  • Greek-style Coconut Yoghurt (I used @raglanfoodco )

  • Berries

  • Fresh mint


Instructions

  1. Preheat the oven to 180’C. In a large mixing bowl, combine all dry ingredients: plain flour, cacao powder, baking powder and salt.

  2. Melt the butter and pour it into a separate mixing bowl. Add raw sugar and brown sugar and whisk until well combined and smooth. Add plant-based milk and vanilla extract and mix well.

  3. Incorporate wet ingredients into the mix of dry. Chop the chocolate and add it to the mix.

  4. Grease four ramekins.

  5. Pour in the mix and place the ramekins in the oven. Bake for 18 minutes.

  6. Remove and let them cool down.

  7. Serve topped with coconut yoghurt, berries and mint.

  8. Enjoy! 💚
