These vegan mince tacos are a perfect quick weeknight dinner to enjoy with family. They take approx. 20 minutes to make and are so tasty.

Ingredients
1 Tbsp olive oil
Ā½ medium onion ā diced
1 pack of vegan mince (300g) ā I used @plantfoodsnz
Ā½ tsp chili powder
Ā¼ tsp garlic powder
Ā½ tsp dried oregano
1 tsp cumin
1 Tbsp bell pepper flakes
1 Tbsp tomato paste
1 tsp raw sugar
Salt and pepper to taste

Pico de gallo:
1 tomato (diced)
Ā½ red onion (diced)
Coriander (diced)
1 Tbsp lime juice
1 avocado chopped
Chipotle sauce (La Morena)
Fresh coriander to serve
Instructions
Prepare the ingredients, dice the onion.
In a large frying pan, heat the oil to medium, add onion and fry until golden and fragrant.
Add vegan mince and using a spatula break it into small pieces. Add all the spices: chili powder, oregano, cumin, garlic powder, bell pepper flakes, raw sugar and tomato paste. Mix well and fry for approx. 6-7 minutes ā until brown. Add salt and pepper to taste.
In the meantime, make pico de gallo: in a medium bowl, combine chopped tomato, red onion, coriander, and lime juice. Add salt and pepper to taste.
Heat tortillas and assemble the taco: spread vegan aioli over the tortilla, and place the mince. Add spinach, chopped avocado, pico de gallo, chipotle sauce and some more coriander.
