Vegan Nacho Cups


Easy to make, perfect for lunch boxes and absolutely delicious! Hope you love them as much as we do. šŸ˜Š


šŸ½ Makes 6 cups

šŸ•˜ 35-40 minutes


Ingredients

  • 1 tsp olive oil

  • 1 medium onion

  • 1 can of black beans

  • 2 Tbsp nacho seasoning (I used farrahsnz )

  • 1 Tbsp sweet paprika powder

  • 1 can of whole peeled tomatoes

  • Ā½ red capsicum

  • Ā½ yellow capsicum

  • 1 cup corn chips

  • 6 taco tortillas


Instructions

  1. Prepare the ingredients. Chop the capsicums. Drain the beans. Crush the corn chips into smaller pieces.

  2. In a large frying pan, heat the oil to medium, place the onion and sautƩ for 4 min. Add black beans and seasonings. Stir well and sautƩ for 5 min.

  3. Add peeled tomatoes, break them down with a spatula and simmer for 10min. Add bell peppers and mix well.

  4. Preheat the oven to 180ā€™C. Place the taco tortillas into muffin trays and fill them with the nacho mix.

  5. Place corn chips on top.

  6. Bake for 20 min.

  7. Remove from the oven and let them cool down.

  8. Enjoy!
