So many of you messaged me asking for this recipe when I showed you these delicious Vegan Pear and White Chocolate Muffins in my stories. Here it is! These muffins are everything you need. They are moist, flavorful, and quick to make. Is this your sign to do some weekend vegan baking? I think so!


 

🍽 Makes 12 🕘 35-40 minutes Difficulty: Beginner

 

Ingredients:

  • 4 medium ripe pears

  • 1 block of vegan white chocolate, 100g


  • 2 ½ cups of plain flour/ high-grade flour

  • 1 Tbsp baking powder

  • 2/3 cups of raw sugar

  • ½ tsp cinnamon

  • Big pinch of salt


  • 1 cup of plant milk

  • 1 ½ Tbsp of apple cider vinegar

  • ½ cup of neutral oil


  • ¼ cup of pecans, chopped

 

Instructions:

  1. Preheat the oven to 180'C. Prepare the ingredients. Chop the pears into bitesize pieces. Chop the chocolate into small cubes. Roughly chop pecans.

  2. In a large mixing bowl, mix all the dry ingredients: flour, baking powder, raw sugar, cinnamon, and a big pinch of salt.

  3. In a separate bowl, mix wet ingredients: plant milk, apple cider vinegar, and neutral oil

  4. Pour the mixture into the bowl containing dry ingredients and mix with a spatula until well combined.

  5. Add pears and white chocolate (leave a small handful of chocolate out for the topping), and gently stir to incorporate. Leave for a few minutes so that the pears release the juices. Stir once again and fill the muffin tray with the mix.

  6. Top with pecans and the remaining white chocolate. Gently press the toppings. Bake for 30 minutes.

  7. Remove from the oven and let the muffins cool.

  8. Enjoy!
