Pierogi is almost a sacred food in Poland and taking such a big twist on this very traditional recipe... well, what can I say, it was worth it and we are obsessed with these sandwiches. Let me know what you think š

Ingredients
5-6 medium potatoes
Ā½ block firm tofu
2 medium onions
1 Tbsp vegan butter
Salt, pepper
Wholegrain bread or your favorite bread
Vegan butter to spread on the bread
Bacon bits
Ā½ block firm tofu
1 tsp soy sauce
1 tsp maple syrup
Ā½ tsp smoked paprika
Ā¼ tsp garlic powder
Salt
1-2 Tbsp olive oil to fry
Instructions
Prepare the ingredients: peel the potatoes and cut them into quarters. Boil the potatoes for 25 minutes or until soft. (pinch with a fork to check)
To make the bacon bits: Cut Ā½ of the tofu into small cubes, approx. 0.5cm. In a medium bowl, place the tofu. Add soy sauce, maple syrup, smoked paprika, garlic powder, and salt. Mix well until evenly coated.
In a large frying pan, heat the oil and place the tofu. Fry and stir for between 7-8 minutes.
Drain the potatoes and let them cool.
In the meantime, peel and chop the onions. In a large frying pan, heat the oil to medium, add chopped onions and fry until golden.
Mash the potatoes with the other Ā½ of the tofu (crumb with your fingers)
Add fried onions, butter, bacon bits, salt, and pepper to taste. Mix well.
Spread vegan butter over both sides of the bread slices.
Heat a large frying pan, place 2 slices of buttered bread. Fry for 3 minutes on medium heat, flip and spread the pierogi mix on top of one of the slices. Cover with the 2nd bread slice, press to combine. Fry for 2-3 more minutes.
Serve immediately and enjoy!
