Vegan Quesadillas


Quesadilla is all about the Queso (Cheese)!

I love quesadillas, but let's be honest, it can be tricky to make them vegan and perfectly cheesy.

Here is my easy recipe for super cheesy quesadillas:

Ingredients


Vegan cheese:

  • 1/2 block firm tofu @beansupremefood

  • 1/4 cup nutritional yeast @realfooddirect

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 Tbsp apple cider vinegar @ceresorganicsau

  • 1/4 cup tapioca

  • 1 tsp sea salt

  • 1/2 tsp turmeric powder

  • 1/4 cup warm water

  • 2 Tbsp chipotle sauce (optional) I used La Morena


  • 1 can kidney beans

  • 1/2 tsp cayenne pepper

  • 1/2 tsp sweet paprika

  • 1 tsp dried bell peppers

  • 1 Tbsp cumin powder

  • 1 Tbsp extra virgin olive oil


  • 1/2 red capsicum (chopped)

  • 1/2 yellow capsicum (chopped)

  • 1/2 red onion (chopped)

  • 1 tsp extra virgin olive oil to fry


  • Tortilla wraps (I used @farrahsnz )

  • Chipotle sauce mixed with BBQ sauce to serve


Instructions

  1. To make the cheese: Place all the ingredients in a food processor/blender and blend until smooth. Pour cheese to a saucepan and heat up constantly stirring. It takes 3-4 min until it thickens and converts into gooey melted cheese šŸ˜

  2. In a bowl, place beans and all the spices. Mix well until combined.

  3. To make quesadillas: Heat up oil in a large frying pan. Place one tortilla. Fry for 1-2 min and flip. Place cheese, beans, capsicums and red onion on one half of the tortilla. Fold in half (see video) and press to stick together.

  4. Enjoy!
