I am obsessed with Christmas food and have already planned everything. Here is one of my favorite meals ā€“ Vegan Roasted Cauliflower. Itā€™s crunchy, juicy, and smoky. Yum. Iā€™m in love with it.

šŸ•˜ 50-55 minutes



Ingredients


  • 1 whole cauliflower

  • 3 Tbsp olive oil

  • 3 Tbsp maple syrup

  • 2 Tbsp tomato paste

  • 3 Tbsp lemon juice

  • 1 tsp garlic powder

  • 1/2 tsp sweet paprika powder

  • 1 Tbsp dried capsicum (optional)

  • Ā½ tsp chilli powder

  • 1/4 tsp cumin powder

  • 1 tsp smoked paprika

  • 1 tsp salt

  • 2 Tbsp thyme

  • 3 Tbsp Sliced roasted almonds to serve

  • Fresh thyme to serve


Instructions


  1. Preheat the oven to 180ā€™C. Boil a large pot of water. Place the cauliflower and cook for 20 min.

  2. To make the sauce: in a medium bowl combine: olive oil, maple syrup, lemon juice, tomato paste, garlic powder, cumin, smoked paprika, paprika powder, chili powder, salt, thyme.

  3. Carefully dry the cauliflower and place it on a baking tray. Brush on the sauce on the bottom of the cauliflower, flip over and pour the remaining sauce on the top. Make sure itā€™s covered evenly.

  4. Roast for 45 minutes.

  5. Assemble the plate: Place cauliflower in the center, top with fresh thyme and roasted almonds.

  6. Enjoy!
