Vegan Sausage Pasta Bake


Sausage Pasta Bake is such a classic comfort food, and this is my vegan version of it. It’s a very flavorful and satisfying dish. Perfect plant-based dinner to enjoy with family on a chilly night. Save this recipe for later 😊

Ingredients

  • 2 Tbsp extra virgin olive oil

  • 1 medium onion (chopped)

  • 4 cloves of garlic

  • 4 vegan sausages (I used parsley sage rosemary sausage)

  • ¼ cup chopped fresh parsley

  • 2 Tbsp tomato paste

  • 1 Tbsp red wine vinegar

  • 1 can of diced tomatoes

  • 2 cups of passata

  • ½ Tbsp raw sugar

  • ½ Tbsp Italian seasoning

  • Salt, and pepper to taste


White sauce:

  • 1 Tbsp vegan butter

  • 1 Tbsp plain flour

  • 1 ½ cups of plant-based milk

  • ½ tsp garlic powder

  • ½ tsp nutritional yeast

  • Salt, pepper


  • 400g Rigatoni pasta

  • A handful of fresh rocket


Instructions

  1. Prepare the ingredients: chop the onion, mince the garlic, and break the sausages into small pieces.

  2. Heat the oil to medium. Add garlic and onion. Sauté for 3-4 minutes – until fragrant.

  3. Add sausages and stir well. Sauté on medium-high heat until golden brown – approx. 6-7 minutes

  4. Add parsley and tomato paste and mix well. Sauté for another 3-4 minutes.

  5. Add red wine vinegar and Italian herbs and stir.

  6. Pour in tomatoes and passata and add sugar. Mix well. Cook pasta according to the packaging.

  7. Bring to boil and simmer for 15 minutes. Add salt and pepper to taste. Preheat the oven to 170’C.

  8. To make the white sauce: in a small saucepan, melt butter and add flour. Mix well and add milk. Stir and cook on medium heat until thickened. Add nutritional yeast, garlic powder and salt.

  9. In an oven dish, place cooked pasta and pour in the sausage-tomato sauce. Mix well. Pour white sauce over the top and bake for 15 minutes.

  10. Serve topped with fresh rocket.
