Fresh crunchy cucumber bites filled with vegan seafood mousse. These little Vegan ‘Seafood’ Canapes will give you the taste of the ocean and guess what, they are vegan! They are a perfect plant-based appetizer for your Christmas party 🎄
🕘 15-20 minutes
Ingredients:
1 can of cannellini beans
1 ½ Tbsp of capers
1 pack (4g) of seaweed Nori sheets
1 Tbsp lemon juice (more to taste)
¼ cup olive oil
Big pinch of salt (more to taste)
1 telegraph cucumber (sub. for English cucumber)
Sesame seeds or crushed seaweed to garnish
Instructions:
Cut the cucumber into 1.5cm thick slices and set aside.
In a food processor/blender, place: cannellini beans, capers, crushed seaweed sheets, lemon juice, olive oil, and salt. Blend until smooth.
Using a teaspoon, scoop out half of the cucumber’s centre to fit the mousse. Make sure not to scoop too much – they are meant to be mini bowls.
Using a piping bag or a sauce bottle, place the mousse into the cucumbers.
Top with sesame seeds or crushed seaweed.
Serve chilled and enjoy! 😊
