Vegan ‘Seafood’ Canapes

Fresh crunchy cucumber bites filled with vegan seafood mousse. These little Vegan ‘Seafood’ Canapes will give you the taste of the ocean and guess what, they are vegan! They are a perfect plant-based appetizer for your Christmas party 🎄


🕘 15-20 minutes


Ingredients:


  • 1 can of cannellini beans

  • 1 ½ Tbsp of capers

  • 1 pack (4g) of seaweed Nori sheets

  • 1 Tbsp lemon juice (more to taste)

  • ¼ cup olive oil

  • Big pinch of salt (more to taste)


  • 1 telegraph cucumber (sub. for English cucumber)

  • Sesame seeds or crushed seaweed to garnish


Instructions:


  1. Cut the cucumber into 1.5cm thick slices and set aside.

  2. In a food processor/blender, place: cannellini beans, capers, crushed seaweed sheets, lemon juice, olive oil, and salt. Blend until smooth.

  3. Using a teaspoon, scoop out half of the cucumber’s centre to fit the mousse. Make sure not to scoop too much – they are meant to be mini bowls.

  4. Using a piping bag or a sauce bottle, place the mousse into the cucumbers.

  5. Top with sesame seeds or crushed seaweed.

  6. Serve chilled and enjoy! 😊
