I love summer and BBQs. These vegan skewers speak summer nights for sure. They are crunchy, juicy and so delicious.

đ 35-40 minutes + marinade overnight
Ingredients
2 medium zucchinis/courgettes
1 yellow capsicum
1 red capsicum
1 red onion
200g mushrooms
1 block tofu @beansupremefood
Marinade:
1/3 cup tomato sauce/ketchup
4 Tbsp BBQ sauce
1 Tbsp garlic powder
3 Tbsp maple syrup @ceresorganics
4 Tbsp sundried tomato oil
½ cup water
2 Tbsp tomato paste
2 Tbsp dried capsicum/ sweet paprika powder
Salt, pepper
Instructions
Press the tofu. I like to use my cookbooks for that. đ
Prepare all the ingredients for the marinade.
In a medium-size airtight container, mix all the ingredients for the marinade. Set aside.
Cut all the vegetables into 1-2cm pieces.
Cut the tofu into 1-2 cm cubes.
Place all the vegetables and tofu into the marinade and mix well until everything is covered with the sauce.
Refrigerate overnight or for at least 5 hours.
Cut the mushrooms in half if large
Assemble the skewers.
Grill on a skillet grill or BBQ until golden on each side.
