I'm obsessed with these fritters! They are so crunchy and delicious! š
š½ Serves 2-3
š 30-35 minutes
Ingredients
1 sweet potato (grated)
2 carrots (grated)
1 cup thawed sweet corn
Ā½ red onion (chopped)
2 Tbsp coriander (chopped)
1 tsp sea salt
1 tsp garlic powder
Ā½ tsp cumin
Ā½ tsp chili powder
1 tsp dried bell peppers
3 Tbsp apple sauce (sugar free)
1 tsp baking powder
1 cup flour
3 Tbsp extra virgin olive oil to fry
1/3 cup coconut yoghurt to serve
Instructions
Grate sweet potato and carrots. Chop coriander. Prepare all the ingredients.
In a large bowl, combine all the ingredients.
Heat up olive oil. Scoop approx. 1/4 cup of the mix and pour it onto the frying pan. Fry for 3-4 min on each side until golden.
Serve with avocado, coconut yoghurt or hummus.
