Who doesn't love them? These fritters are so crispy and flavorful. I'm sure you are gonna love them!
đ˝ Makes 12 fritters / Serves 3-4
đ 45-50 minutes
Ingredients
3 zucchinis/courgettes
1 sweet potato
1 red onion
3 Tbsp flax seeds
1 Tbsp chia seeds
1/3 cup water
3 Tbsp apple sauce
3 garlic cloves
½ tsp turmeric
½ cup fresh parsley
6 Tbsp flour
Salt, pepper
3 Tbsp olive oil to fry
I love to serve them with this sauce:
Tomato dipping sauce
1 can chopped tomatoes
1 garlic clove (minced)
1 Tbsp oregano
1 tsp basil
Instructions
Dice the onions and garlic. Grate the zucchini.
Place the zucchini in a bowl. Mix in 1 Tbsp salt.
Move the zucchini onto a tea towel to drain from the water. Squeeze out the excess water. A very important step, so make sure you don't skip it. đ
Grate sweet potato. Chop fresh herbs.
In a large bowl combine all the ingredients.
Fry on heated oil on both sides until golden.
Let them cool for a few minutes before serving.
