Vegan Zucchini Sweet Potato Fritters


Who doesn't love them? These fritters are so crispy and flavorful. I'm sure you are gonna love them!

🍽 Makes 12 fritters / Serves 3-4

🕘 45-50 minutes


Ingredients

  • 3 zucchinis/courgettes

  • 1 sweet potato

  • 1 red onion

  • 3 Tbsp flax seeds

  • 1 Tbsp chia seeds

  • 1/3 cup water

  • 3 Tbsp apple sauce

  • 3 garlic cloves

  • ½ tsp turmeric

  • ½ cup fresh parsley

  • 6 Tbsp flour

  • Salt, pepper

  • 3 Tbsp olive oil to fry

I love to serve them with this sauce:


Tomato dipping sauce

  • 1 can chopped tomatoes

  • 1 garlic clove (minced)

  • 1 Tbsp oregano

  • 1 tsp basil


Instructions

  1. Dice the onions and garlic. Grate the zucchini.

  2. Place the zucchini in a bowl. Mix in 1 Tbsp salt.

  3. Move the zucchini onto a tea towel to drain from the water. Squeeze out the excess water. A very important step, so make sure you don't skip it. 😁

  4. Grate sweet potato. Chop fresh herbs.

  5. In a large bowl combine all the ingredients.

  6. Fry on heated oil on both sides until golden.

  7. Let them cool for a few minutes before serving.
