To celebrate the amazing lime season, I have teamed up with @5adaynz and created this deliciously zesty vegetable curry. The lime notes come through with just the first mouthful, providing fresh yet comforting explosion for the taste buds. This curry will steal your hearts.
It's rich in flavor, velvet creamy, and so satisfying. Make the most of the lime season. Limes are an amazing source of vitamins and minerals, and can bring spark to any dish.
🍽 Serves 3-4 🕘 35-40 minutes Difficulty: Beginner
Ingredients:
1 tsp of oil of your choice, I used coconut oil
1 ½ Tbsp of grated ginger
3 garlic cloves
Zest and juice from 2 limes
1 Tbsp curry powder, mild
1 kumara (sweet potato), chopped
1 pack of firm tofu
1 ½ cups of frozen peas
1 can of coconut cream
1-1 ½ cups of water
Salt to taste
Lime wedges to serve
Instructions:
Prepare the ingredients. Zest the lime, grate the ginger, and mince the garlic. Peel the sweet potatoes and cut them into 1-2 cm cubes. Cut the tofu into 1 cm cubes.
Place the sweet potatoes in a pot, cover with filtered water, add salt to your preference, and boil the potatoes until just tender.
In a large pan, warm the oil to medium heat. Add lime zest, grated garlic and ginger, curry powder, and a pinch of salt. Sauté stirring frequently for approx. 3-4 minutes.
Add 1 cup of coconut cream and water and bring to a boil. Simmer for a few minutes to let the flavors combine.
Add cooked sweet potatoes, tofu, and frozen peas and the remaining coconut cream and more water if needed. Bring to a boil and cook over medium heat for another 10 minutes. Add salt to taste. Squeeze juice from 2 limes and add it to the curry. Mix well.
Garnish with coriander/cilantro and serve with lime wedges, naan and rice of your choice.
